Hey guys! I’m bringing a super simple, and SUPER delicious recipe your way. Pico de gallo has to be one of my all time favorite things to make! It’s cheap, easy, and it goes with everything. I have been known to put this on tacos, salad, chili, pasta, etc. You name it, it goes. This version tastes exactly like Chipotle’s version in all of it’s goodness, minus the E. coli. I still love you Chipotle!
I’m 3 days into this 12 day stretch in the hospital. The days have been long, but it has been such a blast! I have loved talking with my patients and being continually challenged in ways I never have before!

- 4 Roma Tomatoes, chopped
- 1 Medium White Onion, chopped
- 1/4 Cup Cilantro, finely chopped
- 1 Jalapeno, chopped
- Juice of 1 Lime
- 2 Teaspoons Garlic, minced
- Sea Salt and Pepper to taste
- Combine Ingredients together and enjoy!
