Cilantro Lime Flank Steak

Happy Wednesday babes! Today I wanted to do a quick post on this delicious flank steak. Honestly, until this recipe, I had hardly eaten any red meat for about 8 years. Partly for health reasons, but also because I don’t really care for it. Until now. This steak is a lean cut, but cooked this way, it is still so tender and juicy (such an awkward word, but had to do it). Even Andrew, who is about the last person I could picture being a carnivore, was a fan. I love this marinade because it provides a ton of flavor and is super versatile. You can use this on tacos, salads, or by itself paired with veggies or sweet potato fries. It’s so good and SO simple. Even Andrew, who prides himself on making a mean bowl of cereal could get this done. Let me know what you think!

Cilantro Lime Flank Steak

Ingredients

  • 1 Cup Water
  • 1/4 Cup low sodium soy sauce
  • 2 Tablespoons liquid smoke
  • 2 Teaspoons minced garlic
  • 1 Teaspoon cayenne pepper
  • 1 Teaspoon chili powder
  • 1 Teaspoon onion powder
  • 1/4 Cup cilantro, chopped
  • 1 Tablespoon olive oil
  • 1 Teaspoon salt
  • 1/2 Teaspoon pepper
  • Juice of 3 limes
  • 2 Pounds flank steak

Instructions

  1. In a large bowl, combine all ingredients except steak.
  2. Mix until well combined.
  3. Add steak to mixture.
  4. Allow to marinate for 3 hours or overnight.
  5. Heat grill to high heat.
  6. Cook on high heat for 1-2 minutes on each side.
  7. Turn heat down to low. Cook for another.
  8. Cook until done to your liking: 125-130 degrees for rare, 140 degrees for medium rare, 150 degrees for medium.
  9. Remove steak from grill. Place on plate and cover tightly with aluminum foil and allow to rest for 10 minutes.
  10. Eat on tacos, with veggies sides, or on a salad with avocado cilantro dressing and chopped avocados.
