The weather is finally getting to warmer temperatures here in breezy Minnesota, and with that comes more time outside. Andrew and I have enjoyed going on walks every day after work or on the weekends. Sometimes I think we are in our twenties going on sixty. Our free time consists mostly of going on walks, talking each other’s ears off, speculating about the future success of the Vikings, planning out holidays 6 months in advance (I am so sorry to our future children and grandchildren), and of course, doing all of these things before going to be between nine and ten o’clock. The last drink I had was the Superbowl – I probably won’t have another until the next Super Bowl. We don’t even have kids yet. What are we going to do when we are even more exhausted than we are already? How do you moms and dads do this?
So after that lengthy aside, I love the ability to spend more time outside after being trapped for the last 4 months, but I also know that with spring comes a much needed break from oranges and grapefruit as new produce floods the grocery stores. Yesterday I went shopping and picked up these strawberries and blueberries, fully anticipating them to be mediocre at best, but they exceeded every expectation. Even Andrew, who picks over every berry in the package before deciding to ingest them, thought they were terrific.
By this time of year I am more that ready to leave my recipes for comfort food and fully embrace fresh fruits and vegetables instead. So be ready for a heavy dose of various salads and wraps and fruits and veggies people. We need ’em.
I whipped up this salad last night for dinner and it was terrific. This is sans dressing as I feel the juice from the berries provides enough flavor, but it would also be terrific paired with a raspberry viniagrette and some grilled chicken for additional protein. I thought this was terrific as is, and I’ll definitely be making it on the regular. I hope you love it as much as I do!

Crunch Berry-Kale Salad
– ½ Cup strawberries, sliced
– ½ Cup blueberries
– ¼ Cup unsalted cashews
– 2 Cups Kale
– Raspberry Vinaigrette
– Grilled Chicken (optional)
– Combine strawberries, blueberries, cashews, and kale
– Toss until well combined
– Drizzle with raspberry vinaigrette
– Add grilled chicken (optional)
