Hey guys! I’m on day 8 of my 12 day stretch at the hospital, so forgive me for any grammatical errors that may pop up in this post! I’m a little bit on the delirious side, that and all the election craziness makes for a very distractable Emily. So far hospital service has been wonderful, and exciting, and SO intense. It has been challenging in the most terrific of ways. From treating heart failure, to hyponatremia, to diagnosing seizure disorders. I have had a lot of variety on my service and some absolutely wonderful patients. I told Andrew this weekend that it is amazing how quickly you can bond with people you have never met and will likely never see again. I love going to the hospital and look forward to seeing my patients. I wouldn’t trade this job for any other and I feel so fortunate to live this dream. I am SO blessed!
For my recipe today, I’m hitting you with yet another salad. Guys, I know it’s excessive. I’m working on variety, but with a tight schedule and lots of obligations, it is the easiest way to eat healthy for me and gives me the most bang for my buck. This salad is packed full of yumminess (yes I am a doctor, and yes I am using this word), Candied almonds, dried blue berries, avocado and granny smith apple come together in this delicious bowl. I top it with my avocado dressing and call it a meal. It’s delicious!
- 1/2 Avocado, chopped
- 1/4 Cup candied almonds and blueberries
- 1/8 Cup crumbled blue cheese
- 1/2 Granny smith apple, chopped
- 2 Cups Romaine Lettuce
- 1/4 Cup Avocado Dressing
- Chop avocado, apple, lettuce
- Toss together with the rest of the ingredients and enjoy!
