Hey there! It has been so long since I last posted! Like months. A lot has happened in that time: I started my medical residency, I’ve completed 4 rotations, which is honestly terrifying. It is going so crazy fast! Not every moment has been a blast, but darn near. I absolutely love my job, and establishing my own patient panel. It makes me so happy and excited to go to work every day. Tomorrow I start my first month of hospital medicine – it will be a busy month, but I’m excited for the challenge and all of the learning. Oh yeah, and I finished my boards – which is really why I’ve been MIA. I wanted to get my last set out of the way so I can focus on learning and the things I love. I’m so excited to be back at this whole blogging for fun thing!
Things will change a little around here. Last time, I was doing one food post, one fashion post, and one fitness/health post. Well, I’ve decided to drop the fashion posts for now. Honestly, it didn’t feel genuine or real to me and it was weird to be taking pictures of myself posing in outfits all the time. Plus, the whole pressure to buy new stuff all the time. Our income has increased as I’m now making money and not straight up losing money by taking out loans, but we have a lot of loans sooo financially, this is totally in our best interest. So the new format is: Meal Prep Monday, a new recipe on Tuesday, a fitness/health post, and for a while, I’ll be posting about my progress on a new fitness program I’m doing. I’m so excited about this format and I think it will be truer to who I am and my passions. If you have suggestions or things you’d like to hear about, please let me know! Okay so this is the first of the Meal Prep Monday posts. I’ll be posting what my meal plan is for the week. Over the last few years, I’ve gotten far too used to convenience foods and packaged items. Now, while I have no intention of completely tossing out anything pre-packaged, I am trying to get away from it and focus on healthier alternatives. I know I feel better internally and externally, and if I’m asking my patients to stick to a similar diet, then I should too. Changing eating habits is HARD, but I’m up for the challenge. Now, with it just being Andrew and I, and certainly with my long hours over the next month, I mainly cook on Saturday or Sunday, and pretty much eat the same thing every day throughout the week.
