Meal Prep Monday: Week Two

Hey guys! How was your weekend? We had a terrific one! On Friday I ended up getting off of work early and was able to go on a long walk with Andrew – one of my absolute favorite things, and definitely something we are trying to soak up as the weather begins to change and it starts getting dark SO EARLY! I absolutely hate that! It means working out in the morning is dark and at night – it is a no win situation. Anyway, so we had a nice relaxing Friday and then went to my Mom’s for the weekend to celebrate my sister’s 15th birthday. My brother came into town as well so it was all of us together. Great food, great talks, and lots of games. It was a blast! I absolutely love it when we can all get together and it is just getting harder and harder to do. It was definitely a busy weekend and I am working the next 12 days at the hospital, so I definitely didn’t get a ton of rest heading into this craziness, but it was so worth it. Family time is the best time, and I feel so fortunate to have everyone in one place whenever we can.

Here is my meal plan for week two. After a major weekend of indulgence, I am working hard this week to have a very veggie-centered meal plan for the week. In fact, you will see more vegetarian meal plans over the next few weeks as we head into the holidays. Don’t get me wrong, I love the parties and all of the delicious food, but even after a few days, I start getting major cravings, feeling sluggish, and it is just that much harder to get back on track. When eating more produce-centered, I make sure to add lots of healthy fats, otherwise it is too easy to skimp on the calories. Nuts, avocado, hummus, they are all finding their way onto my plate.
