Hello there! I hope you all had a glorious weekend! Last week was my birthday, anniversary, and graduation from medical school. Needless to say, the weekend kicked total butt! Andrew and I went down to Des Moines on Thursday night and celebrated my birthday/our anniversary by eating out at Cheesecake Factory. It was soooo good! We ate a lot later than we normally do, so there was a lot more eating than chatting for a bit. We took a slice of apple cheesecake to go as we were quite full after our meal, and we shared it a couple days later. It was absolutely delicious and I am working on a recipe to recreate it. The weekend was filled with good food, good talks, and lots of family time. It was everything I could have wanted and more. It was such a good reminder of how many blessings God has given me, and how incredibly lucky I have been in life. Celebrating 26 healthy years, 4 years married to my best friend, and accomplishing something I’ve wanted for my whole life…I don’t know if I could have taken any more happiness!
So on to today’s post, this is a scramble I have been eating NON-STOP for the last few weeks. I’ve been working really hard on increasing my protein and veggie intake and watching my carb intake. That being said, my lunch today did consist essentially of a baguette, berries, and fresh whipped cream this afternoon, so I’m clearly not striving for perfection. With the exception of an occasional carb-laden meal, I’ve been eating this dish a lot. It’s really the perfect meal with a huge helping of egg whites, and a gigantic serving of veggies. Finished off with some garlic powder and Mediterranean Herb feta cheese, it doesn’t even feel healthy!
- 1 Cup liquid egg whites
- 1 Roma tomato, chopped
- 1 Large handful of spinach, chopped
- 1/4 Cup Mediterranean herb crumbled feta cheese
- 1/2 Teaspoon garlic powder
- Heat a skillet over medium high heat.
- Reduce heat to medium.
- Add egg whites and spinach to skillet.
- Cook 2-3 minutes, until egg whites are nearly cooked and spinach is wilted.
- Add tomato, feta cheese, and garlic powder.
- Cook for another 2 minutes.
