Hey guys! Short post today as Andrew and I are taking a little vacay before I start residency. The first time I ever had this salad was in the Old Market of Omaha, Nebraska during college. For the most part, I don’t care for mixing sweet flavors with my protein, but this recipe left me forever converted. It’s the perfect blend of flavors and it is so light and refreshing. However, for a salad, it definitely leaves you feeling full. For the salmon, I used this recipe. I think there is enough flavor in this salad by itself to enjoy it plain, but it is also fabulous paired with this avocado dressing. It is absolute perfection. For those of you who are like me and continue to put off getting into shape, this is a great staple recipe that will have you well on your way to success! So yummy!

- 4 Ounces of salmon, cooked
- 1 Ounce Gorgonzola cheese, crumbled
- 1/4 Cup dried cranberries, and glazed walnuts
- 2 Cups kale, chopped
- 1 Anjou pear, sliced
- Toss together cheese, cranberries, and walnuts until well mixed.
- Top with sliced pear and salmon.
