Do you know what is seriously one of my biggest pet peeves? Like makes my skin crawl and has me near seething? Bad weekly ads. Okay, maybe I’m being a little melodramatic, but how is it that in a single week, not one grocery store can have 7 things in an entire ad that I feel motivated to purchase? I spend an hour pouring over the ads and I want to reap the rewards, gosh darn it! Granted, I only get excited over fruits, vegetables, protein, and the select dairy items. So, yeah, I’m a little high maintenance. Of course, Andrew and I differ in what gets us excited – Andrew gets amped for Cocoa Pebbles and Frito dippers. This week, we both struck out. Seriously peeps, step up your game!
So on to today’s recipe. Do you know what I love about eggs? The options are limitless. Some people get bored with eggs, but I cannot get enough – omelets, over easy, hard boiled, raw…JUST KIDDING! I eat them several times a week, mixing it up on the regular, but this recipe has been on repeat for sure. The combination of shrimp, crab, olive, and cheese makes sure you are getting a ton of flavor in every bite. Not to mention you are getting a huge dose of healthy protein in this meal. Andrew has his with 3 eggs, I have mine with 1 egg and about half a cup of egg whites to increase the protein content. If you really want to make it clean you can skip the cheese, but why on earth would you want to do that? Blasphemous!

• 1 Egg
• ½ Cup egg whites
• ¼ Cup crab meat, chopped
• ¼ Cup salad shrimp
• ¼ Cup reduced fat cheese
• 5 olives, chopped
• Heat skillet over medium high heat
• Mix egg and egg whites until well combined
• Combine crab meat, shrimp, and olives, pour mixture over eggs
• Scramble combination
• Once eggs are cooked through, turn heat to low
• Add cheese, mix until melted
• Serve hot
