I’m finally on my last week of OB! Props to everyone who loves it. I love babies, but the job is just not for me – mostly because I am just totally not a go with the flow kind of person. I am Type A to a fault – the kind of person who relishes the opportunity to make schedules, lists, and plan. Not to mention my undying love for organization, exemplified by my giddiness for spring cleaning and purging every corner of our house. I just love it, guys! OB just doesn’t allow me to embrace all of those things I love – all of you mamas out there know that babies come when they want, regardless of any plans you have or what will be convenient for you. So for the entire month, I say goodbye to my schedules and to-do lists because any ideas I have aren’t going to go according to plan anyway. So long story short, I am so ready to fully embrace my next month in ER! So epically, totally pumped.
With graduation around the corner, and summer coming right along with it, I’ve been trying to gravitate towards fresh and whole foods instead of packaged, processed stuff. I should be choosing these foods anyway because they are good for me, not because they will simultaneously help me look good in a swim suit, but sometimes that tub of ice cream is calling my name and I just cannot say no. There is nothing like a deadline to heighten motivation, and these four years of crazy schedules and endless studying have left a permanent butt imprint on our couch, so I’ll be kicking it into high gear – not just to get into shape for the short term, but to re-establish healthier habits.
These lettuce wraps are an easy meal I find myself whipping up on the regular now that the temperatures are rising and the sun is hanging out with us a little longer. They take about 5 minutes to make for myself, and just a little longer if I’m whipping up a bunch. Paired with a side of fruit or veggies, and they keep me satisfied for hours. Delicious and nutritious, and they’ll leave you feeling light and refreshed! I hope you love them as much as I do!

Spicy BLT Lettuce Wraps
• 2 Bunches romaine lettuce
• 8 Slices turkey bacon, cooked
• 8 Ounces sliced turkey
• 4 Roma tomatoes, chopped
• 1 Cup spicy hummus – I used HOPE Spicy Avocado Hummus
• Separate and wash romaine lettuce leaves. Pat dry with paper towels
• Crumble turkey bacon into small pieces
• Layer turkey on top of lettuce – I usually layer two pieces of lettuce together.
• Sprinkle each wrap with pieces of bacon and tomato
• Drizzle with hummus
• Top with another piece of lettuce (optional)
