Hello! We’ve got Monday under our belts, which for me is always the biggest hurdle, but this week already seems like it’s taking forever! Is anyone else feeling like that? Maybe it’s the dreary weather we have been having in Southern Minnesota, but whatever it is, it’s had me feeling seriously glum going into the day. I’m ready for some sunshine! On the plus side, all of this rain has everything looking so fresh and green and the blooms on the trees look just gorgeous!
One of my favorite parts of spring is busting out the grill again and doing barbecue. There is just something so great about sitting outside and enjoying warmer temperatures and munching on good food. Andrew is getting antsy for sweet corn and watermelon, but I’m totally digging all of the berries and green veggies that are in season right now.
This is a chicken recipe we have been using for a few years, and it’s seriously the best! It’s all due to the marinade, which leaves the chicken super tender and flavorful. It’s terrific plain, rolled up into a wrap, or chopped and thrown on salad. I ensure you, this will quickly become a recipe in your own home!

The Best Grilled Chicken Breast
• 2 Cups of water
• 1/3 Cup low sodium soy sauce
• 2 Tablespoons sea salt
• 2 Tablespoons white vinegar
• 2 Teaspoons garlic, minced
• 1 Tablespoon chipotle seasoning
• 2 Teaspoons paprika
• 1 Teaspoon onion powder
• 1 Teaspoon black pepper
• 2 pounds chicken breast
• Mix all ingredients, except chicken breast, together in a large bowl.
• Add chicken breast to the bowl.
• Marinate for 4 hours.
• Heat grill to medium heat.
• Cook until 160 degrees internally, about 7 minutes on each side.
