Wholly ‘Skinny’ Guacamole

Do you ever go to someone else’s wedding, only to wish you could re-live yours all over again? Or, if you aren’t married, that you could just dream your perfect day up and execute it to perfection? Well, that is me, like, every time we go to a wedding. This weekend we went to Andrew’s cousin’s wedding and it was rustic, and beautiful, and I honestly wanted to jump into a little white dress and have my own exchanging of the vows. Andrew probably wouldn’t have gone for it….so I would have been saying vows alone…to myself…I’m pathetic.

Yesterday we were home and it feels like the first time in weeks that we have had a day alone together. We don’t even have kids yet and I feel like our life is nuts…I’m am going to be a totally overwhelmed mom. Andrew requested fish tacos for lunch and we decided to have this delicious guacamole-yogurt dip. We both love guacamole, and yes it is full of healthy fat and goodness, BUT it also has a boatload of calories and if you are like me with a certified chips and guac addiction and no self control, you have to improvise. Enter fat free plain greek yogurt. It makes that guac stretch a little further, and honestly, we both think it is just as good as the real thing…we basically ate the whole batch. So in a way, I kind of defeated the purpose of health-ifying this. Oh well…YOLO. Try it out. I challenge you to exercise restraint. If you do, you’ve got one up on me.

Wholly 'Skinny' Guacamole

  • Servings: 4-8
  • Time: 15 minutes
  • Difficulty: Easy

Ingredients:
• 2 medium ripe avocados, pealed, pitted, and diced
• 2 tablespoons-1/4 c diced red onion
• ¼ cup diced green chiles (1/2 of a 4 oz can)
• ¼ c cilantro leaves
• 1-2 tablespoon lime juice
• 1 garlic clove crushed
• 2/3 cup diced roma tomatoes
• 6 oz container of non-fat plain greek yogurt
• Salt and pepper to taste

Directions:
• Combine all ingredients in a food processor and pulse until desired consistency.
• Serve with tortilla chips.
